
Ankara Metropolitan Municipality Public Bread Factory produces additive-free snack 'People's Cookie' using the extrusion method from misshapen or undercooked bread, while also preventing obesity and waste.
Due to the increasing demand for 6 types of snacks and 4 types of grissini produced by recycling surplus bread, the Halk Bread Factory has taken action and will start selling the products in bread stands across the city.
The 100% natural 'Halk Snacks' produced by Ankara Halk Bread Factory from misshapen or undercooked bread will be sold in 420 bread kiosks across the city with the new application.
The demand for the 6 types of healthy snacks and 4 types of snack grissini produced by Halk Ekmek is increasing day by day. The project, in which daily produced, fresh and clean breads are transformed into Halk Çerez with special methods to prevent waste, also aims to prevent both obesity and bread waste.
30 THOUSAND PACKAGES ARE PRODUCED DAILY
Stating that 6 types of Halk Snacks are produced, namely plain filled, peanut flavored, hot pepper flavored, filled with cocoa, whole wheat flour and gluten-free, Halk Ekmek Factory R&D Food Engineer Nurettin Şimşek said:
“As Ankara Halk Ekmek Fabrikası, we offer the snacks we produce from deformed or undercooked breads to the public at our Halk Ekmek Buffets. In addition to 6 types of Halk Ekmek, we also produce plain, sesame, whole wheat and black cumin grissini as snacks, as well as gluten-free cocoa hazelnut cream snacks and gluten-free breakfast cereals for our celiac patients. Our factory has a daily production capacity of 30 thousand packages of snack snacks without human intervention. Our snacks are produced by baking without frying in oil.”
COOKIES ARE PRODUCED DIFFERENTLY FROM SIMILAR PRODUCTS
The cookies produced in ovens without frying in oil are natural because they do not contain additives. They are produced from breads that are produced daily and are over-toasted, unopened and deformed during production. Similarly, the 3 different types of grissini produced are in high demand because they are low in calories and give a feeling of satiety.
Halk Cookies and grissini are different from similar products;
-The product group is produced using the extrusion method from breadcrumbs obtained from different breads.
- Before the products are fried in oil, their surfaces are coated with aroma substances by spraying oil with a special nozzle system.
-The fat content of the products is approximately 60 percent lower than their counterparts.
-It does not contain any chemical preservatives and its saturated fat content is approximately 50 percent less than its counterparts.
-The energy criteria coming from sodium, sugar and saturated fat in the portions are much lower than its counterparts.
