One of the indispensable dishes of Şanlıurfa, the city of gastronomy, tray kebab has been registered with a geographical indication. With Tepsi Kebab, the number of registered dishes of the city increased to 38. Stating that there are many types of dishes that need to be registered, Şanlıurfa Metropolitan Municipality Mayor Zeynel Abidin Beyazgül said that Şanlıurfa cuisine is also the zero point of history.
Tray kebab, one of the local dishes of Şanlıurfa, has been registered by the Turkish Patent and Trademark Office. With the application of Şanlıurfa Metropolitan Municipality, Şanlıurfa Chamber of Commerce and Industry, 38 products, including raw meatballs, onion kebab, lahmacun, tirit, liver kebab, şıllık dessert, plain butter, eggplant kebab and tray kebab, were registered by the Turkish Patent and Trademark Office.
Lamb meat is prepared with eggplant, the meat from which the tail fat is drawn with armor. Meat and eggplants arranged on the tray are cooked in stone ovens and made ready to eat. Proprietary tray kebab cooked in a stone oven is served with Urfa isot and lavash bread.
While the tray kebab prepared with registered Birecik eggplant and armored meat was prepared by Chef Muhittin Kılıç, Şanlıurfa Metropolitan Municipality Mayor Zeynel Abidin Beyazgül accompanied him.
Şanlıurfa Metropolitan Municipality Mayor Zeynel Abidin Beyazgül explained that Şanlıurfa has become a center for gastronomy and that the registered dishes of Şanlıurfa region are promoted in the world, "Göbeklitepe is the zero point of history, humanity spread from here to the world and life began, humanity began. Many beauties belonging to every civilization in every period of humanity live and continue to live in Şanlıurfa. One of them is Gastronomy and taste. Şanlıurfa is a center for gastronomy and taste. So far, 38 kinds of food have been registered. We have 13 kinds of registered food waiting in line. However, this number reaches numbers exceeding hundreds of them in our study for today. We know that this number will increase day by day. Because Şanlıurfa is a place where flavors from many civilizations in the world are gathered. This may have spread all over the world from Şanlıurfa, or what happened elsewhere may have occurred in this city where civilization intersects. For this reason, Şanlıurfa is a center of gastronomy, a place of wealth,'' he said.
Underlining that Şanlıurfa, the city of history and culture, is number one in Gastronomy, Mayor Beyazgül said, “Our tray kebab has been registered. It requires a lot of care from eggplant, meat, cooking and putting it on the table. We cut the eggplant and put it between the meat, but if you lose a small detail about flavor, you lose the flavor as well. If you are going to bring Urfa isotu, open bread and a nice oven-baked kebab in front of you, it should be brought in Şanlıurfa. Because they all complement each other. The oven is very important and the cooking technique is very important while cooking, again the arrangement of it on the tray and the receipt of the material are very important. Our masters from Şanlıurfa do this in many parts of Turkey, giving them the taste of Şanlıurfa. From now on, after we get the registration of 13 of our dishes, we will also promote them. Şanlıurfa, the city of history, the zero point of history and a museum city, is also number one in Gastronomy. The world will witness this as the number of our registered dishes increases over time,'' he said.
Stating that Şanlıurfa cuisine is the zero point of history, together with Göbeklitepe, which sheds light on the history of humanity with its 12 thousand-year history, Mayor Beyazgül said, “Şanlıurfa is also the zero point of history in the kitchen. A process of 12 thousand years has improved the flavors much more. It has gathered more flavors available in the world and made more mixtures, this is the result of 12 thousand years of history. This process has made Şanlıurfa a city of flavor and gastronomy.
